Neige Winter Harvest has been created from traditional and rare apple varieties including Cortland, McMillan, Honey Gold, Fuji, Pouliot and  Golden Russet. The apples are only picked in winter where the temperates can fall below -15 °C, these conditions concentrate the sugars. The sweet liquid is then fermented for eight months in steel tanks.
